of the olives. The skin of the olive,
however, prevented the flavor of the
herbs from reaching the pulp. By cracking
the olives first, the marinade saturated
the pulp and a savory olive dish was
created.

hand cracking of green olives is an
art form. The olive must be cracked
just enough to break the skin and
pulp while leaving the juices and
pit intact. Brothers-in-law Michael
